Global Variable - Application_ExpirePasswordAfterDays

I set Application_ExpirePasswordAfterDays to 30 and cron active, but my password never expire

What I do wrong?

Nothing, that is all there is to it. In fact, I just helped a client do this last week.

Make sure the vtiger_users.last_password_reset_date is filled in and there actually are some users with this date set to more than 30 days ago
